Die Arbeiten im Sojaforschungsprojekt waren erfolgreich und konnten wichtige Impulse für die Ausweitung des Sojaanbaus in Deutschland geben. So sind die entwickelten Stämme und Kreuzungsnachkommen eine Basis für den Aufbau einer eigenständigen deutschen Sojazüchtung. Die Sorten Korus und Protibus erwiesen sich als besonders geeignet für die Tofuherstellung. Die im Projekt entwickelte Labortofurei ist ein Züchtungsinstrument zur Identifikation vielversprechender Genotypen, mit dem auch die weitere Entwicklung frühreifer Tofusojasorten unterstützt werden kann. In Gefäßversuchen konnte gezeigt werden, dass die Reaktion auf Kühlestress während der Hülsenansatzphase zwischen den Sorten variiert und es tolerante, kompensierende und sensitive Sorten gibt. Due to its high (40%) protein content the global significance of soybean has been constantly growing in food and feed production alike. The manual consists of relevant up-to-date information of production, processing and marketing of soybean in Europe and can be used by organic producers, processors, traders, policy makers and other stakeholders as well. Its aim is to provide basic yet comprehensive guidelines for the development of the European production and market.

Verhalten von Sojasorten mit unterschiedlicher Trypsininhibtoraktivität bei der Aufbereitung Organic Eprints

The organic acreage of soybeans in Germany is growing steadily the last five years. It is mainly used as protein feedstuff for poultry and pigs. To eleminate antinutrional factors in soybeans before feeding, a very energy intensive processing is required. The aim of the study was to find out if varieties with less trypsin inhibitor activity (TIA) require less energy input. For that a hydro-thermal soybean processing trial was conducted with a combination of autoclav and expander. Four soybean varieties varying in the TIA were used in 20 different process variations.
